Pumpkin Soup
 Ingredients:
500 gms Red Pumpkin (peeled & cut)
1 Onion (finely sliced)
4 Garlic cloves (chopped)
½ tsp Ginger (grated)
½ tsp Cumin powder [jeera]
½ tsp Black pepper powder
½” piece Cinnamon [dalchini]
½ Cup Milk (low fat)
2 tsp Butter/Olive oil
1 tsp chopped Coriander leaves
Salt to taste
Method:
Heat oil in a pan; add cinnamon and onion and sauté till the onion is soft and translucent. Add chopped garlic and sauté for a minute. Now add the cut pumpkin, grated ginger and 2 cups water and cook till the pumpkin is tender and done. Cool the mixture and remove the cinnamon stick. Transfer the mixture to a food processor and blend it until it turns into a smooth texture. Pour the smooth puree back into the pan and add milk (adjust the consistency by adding water). Simmer on medium heat and now add cumin and pepper powder. Add salt as per taste and cook on low heat for a minute. Garnish with chopped coriander leaves and serve hot.

Spinach Soup



Spinach Soup
2 medium bunch fresh spinach
2 tbsp unsalted butter
4 garlic Cloves (chopped)
1 bay leaf
1½ cup milk
1 medium onion (finely chopped)
2 tbsp fresh cream
1/4 tsp white pepper powder
Salt to taste
Method:
Blanch the spinach leaves and immediately dip the spinach leaves into cold water to arrest further cooking. Drain and chop the spinach leaves, keep aside. Heat the butter in the pan and add bay leaf, garlic and chopped onion. Sauté till the onion becomes soft and translucent. Add the chopped spinach leaves and sauté for 3-4 minutes or till the leaves turn soft . Stop cooking and cool the mixture. Remove the bay leaf and puree the mixture into the blender to make a smooth paste, add 1½cup milk while blending. Add extra milk to adjust the consistency of the soup. Pour the mixture again in the pan and let it come to a boil, add salt as per taste and simmer the soup for 2-3 minutes. Add fresh cream. White pepper and give it a stir. Serve warm.

Kadhai Paneer

Kadhai Paneer

Ingredients:

200 gms Fresh Paneer cut into cubes
2 Onions finely chopped
3 Tomatoes finely chopped
1 Capsicum chopped (square)
1 tsp Ginger garlic paste
1 “piece Cinnamon
2 Cardamom
2 cloves
2 tsp Coriander seeds
2 Dry Red chillies
1 tsp Cumin seeds
1 Bay leaf
1 tsp Red Chilly powder
1/4 tsp Turmeric powder
2 tbsp chopped Coriander leaves
2 tsp Dry Fenugreek leaves [kasturi meethi)
2 tbsp Ghee or Refined Oil
Salt to Taste

 Method:

Dry roast the following and grind into a fine powder: cinnamon, cardamom, cloves and dry red chillies. Heat ghee in a pan and add cumin seeds and allow it to splutter, now add bay leaf, chopped onion and ginger garlic paste and saute till the onions are golden in colour. Add the chopped tomatoes and saute for 3-4 minutes till the tomatoes are soft. Now add capsicum, red chilly and turmeric powder and 1/4 cup of water, stir the mixture. Cover and cook till the capsicum are soft. Now add the cubed paneer, coriander leaves, ground spices and mix well. Add 1/4 cup water and stir well. Cover again and cook on low heat for another 5-7 minutes. Now add the dry fenugreek leaves and stir well, close the lid till serving. Serve hot.

Paneer Makhani




Paneer Makhani
Ingredients:
250 gms Fresh Paneer (cut into ½ " cubes)
3 Medium Tomatoes (ripe)
2 Medium Onions sliced
1" Ginger chopped
4-5 Garlic flakes chopped
8-10 cashew nuts (soaked in water)
½ cup fresh Cream
1 tsp Garam masala
2 tsp Kashmiri Red chilli powder
1 tsp Coriander powder
½ tsp Cumin powder
1/4 tspTurmeric powder
1 tsp Dry Fenugreek leaves(Kasuri methi)
1 tbsp chopped coriander leaves
3 tbsp Oil
2 tbsp Butter
1/4 tsp Sugar
Salt to taste

Method:
Blanch the tomatoes remove skin and make puree. Take a kadhai and heat 1 tbsp of oil and sauté the sliced onions till they are golden in colour. Remove the onions and keep aside. Grind the cashew nuts to a very fine paste using some water. Now grind together sautéed onions, ginger and garlic. Take a kadhai and heat 2 tbsp of oil and add the ground mixture. Sauté for 3-4 minutes, now add the tomato puree and sauté till it starts leaving oil. Add coriander and cumin powder, turmeric powder, chilly powder, sugar, garam masala and salt as per taste. Add 1½ cups of water along with cashew paste and stir. Simmer for 3 to 4 minutes. Now add fresh cream, butter, dry fenugreek leaves and Paneer pieces and simmer on medium heat for another 2-3 minutes. Garnish with chopped coriander leaves and serve hot.

½ छोटा चम्मच जीरा पाउडर

छोटा चम्मच हल्दी पाउडर

छोटा चम्मच कसूरी मेथी

बड़ा चम्मच कटा हुआ हरा धनिया

बड़े चम्मच तेल

बड़े चम्मच मक्खन

छोटा चम्मच चीनी
स्वाद के अनुसार नमक

टमाटर को हल्का उबालकर उसके छिलके और बीज निकालकर उसकी प्यूरी बनाये.एक कड़ाही मे 1 बड़ा चम्मच तेल ले लो और उस मे कटा हुआ प्याज डालकर हल्का सुनहरा होने तक भून लें. भूना हुआ प्याज निकालें और अलग रख दें. काजू को पीस के उसकी बहुत महीन पेस्ट बनाये. अब भूना हुआ प्याज, अदरक और लहसुन को मिक्सर में एक साथ पीस लें. अब एक कड़ाही मे 2 बड़े चम्मच तेल ले लो और उस मे प्याज, अदरक और लहसुन का मिश्रण डालकर 3-4 मिनट तक भून लें और अब इसे में टमाटर प्यूरी डाल कर अच्छी तरह भून लें. जब मसाला तेल छोड़ने लगे तो इसमें जीरा पाउडर, हल्दी पाउडर, मिर्च पाउडर, चीनी, गरम मसाला और स्वादानुसार नमक डालें. अब इसमें कप पानी और काजू पेस्ट डालकर 3 से 4 मिनट के लिए उबाले(लगातार मिश्रण में चम्मच चलाये). अब ताजा क्रीम, मक्खन, कसूरी मेथी और पनीर के टुकड़ों डालकर 2-3 मिनट के लिए मध्यम आँच पर पकाये. हरा धनिये से गार्निश करे(सजाये) और गरमा गरम परोसे.
