Sabudana Vada

Sabudana Vada
Ingredients:
1 ½ cup sabudana (sago)
3 medium potatoes (boiled and peeled)
½ cup roasted peanut powder (coarse)
1 tbsp chopped coriander leaves
2 chopped green chillies
1 tsp roasted cumin seed powder
1 tsp sugar
salt to taste
oil for frying
Method:
Wash sabudana 2 to 3 times and soak in ½ cup of water for 2 to 3 hours. Once it is properly soaked, sabudana grains will become tender and separated. Mash potatoes to that add sabudana, roasted peanut powder, chopped coriander leaves, chopped green chillies, cumin seed powder, sugar and salt. Mix throughly. Make 2” to 2 ½ “ balls of the mixture and flatten between palms of your hand. Heat sufficient oil in the wok (Kadhai) and deep fry the vadas till golden brown. Drain on absorbent paper and remove excess oil. Serve Hot with yogurt chutney.
Maharashtrians eat Sabudana vada during fast.
